Broiled Tomatoes
Ingredients:
Campari tomatoes or similar
Garlic, fresh* (1/2 clove per tomato) or powder
Olive oil
Salt
Pepper
*If tomatoes won't sit at least 3" from heat source, don't use fresh garlic, or lower heat if possible.
Equipment:
Broiler
Pan, covered in foil
Directions:
Position rack in broiler so the tomatoes will sit 3" from heat and preheat to 500°F. Cut bottoms off tomatoes and arrange on pan (cut larger tomatoes in half, squashing bottoms if necessary to keep them upright). Stick garlic slivers into the tomatoes (if applicable, otherwise use powder), drizzle with oil, and sprinkle salt and pepper to taste. Broil just until tomatoes release their juices and garlic browns, about 5-10 minutes. Spoon pan juices over tomatoes before serving.
Servings:
However many tomatoes you put on the pan, fool.
