Pickled red onions


Ingredients:
1 medium-to-large red onion, thinly sliced
3/4 cup apple cider vinegar
1/4 cup water
1 tsp salt
1-2 Tbsp sugar

Equipment:
Saucepan
Spoon
Jar with lid

Directions:
Heat vinegar, water, salt, and sugar in saucepan until simmering, stirring to dissolve solids.

Put sliced onion into jar and pour in simmering liquid mixture until completely covered, packing down as needed. Screw on lid and let sit for at least 30 minutes.

Serve immediately or refrigerate to continue to marinate.

Servings:
Fills around a 20 oz jar.

Notes:

The thicker the onions are sliced, the longer they should marinate. Thick onions should marinate twice as long as thin onions.

Optional additions: garlic, hot peppers, peppercorns, herbs.

Optional substitutions: different onions, citrus instead of vinegar (1-to-1 replacement with 2 parts orange juice and 1 part lime juice).
